Cooking Healthy at Home with POW! Protein Pasta

Confession: I very rarely eat pasta. I know, I know, it’s everyone’s guilty pleasure, but when I hone in on Italian carbs, it’s usually in the form of pizza. And it’s not because I don’t like it — I love pasta. But I leave it to the professionals when it comes to cooking. But not anymore!

I love indulging in a delicious past a dish when I’m out at a good Italian restaurant, but I can count on one hand the amount of times I’ve cooked it for myself. When I’m home, I like to eat healthy and pasta doesn’t usually fall into that category. But I just might be making it a lot more now that I’ve discovered Ancient Harvest’s POW! Chickpea Elbows. Relatively new to their protein pasta line, this new addition packs a whopping 21 grams of plant-based protein in each serving, plus 8 grams of fiber. The days of eating starchy pasta are behind us with this new, healthy alternative.

I recently cooked up a batch, along with broccoli and cauliflower and topped it with my favorite Rao’s Marinara and ate it up all week long. It’s similar in flavor and texture to a whole wheat pasta, but tastier. Plus, it’s gluten-free, non-GMO, kosher, organic and lower in sugar, sodium and fat than most competitive brands. There’s now no reason you can’t indulge in a healthier way right at home.
