As probably none of you know, June 29th marks the first National Parchment Paper Day. Whether you pay tribute by reading a book, writing in your journal, or doing something creative with paper, we applaud you! We’ll probably end up doing all of the above, but since everyone needs to eat, we decided to get creative in the kitchen.

PaperChef is a culinary parchment company that is committed to bringing “the art of cooking with parchment” to the kitchen. Their products, which range from parchment rolls and cooking bags to baking cups and more, capture and release the natural flavors of your food, and are a great non-stick base for your creations, meaning you don’t have to rely on adding any unnecessary oils to your food.

We loved their aesthetically pleasing Lotus Cups, in which we made a deeeelish egg bake. Not only did they help us to create something healthy in a quick, easy way, but if you were entertaining, they’d make for great presentation. Check out our recipe below and let us know what you whip up next!

Healthy Egg Bake (yields 6)
6 organic eggs
1/4 cup skim milk
2 strips turkey bacon
4 large asparagus spears, cut into pieces
5 broccoli heads, cut into pieces
1/4 cup low-fat shredded mozzarella

Pre-heat oven to 400 degrees fahrenheit. Crack and stir eggs in mixing bowl, along with milk and mozzarella. Pour mixture evenly into lotus cups in a cupcake/muffin pan. Evenly disperse pieces of turkey bacon, broccoli and asparagus into each cup and stir with small fork. Bake in oven for 20 minutes. Enjoy!
