Recipe: Celebrate Pride Month at Home with Fruity Pebbles Ice Cream

We are currently in the middle of PRIDE season, and with a global pandemic keeping most of us home and indoors, unfortunately, all of the Pride parades, parties and celebrations have been cancelled. But that’s not enough to deter us from celebrating in other ways! As things in America are currently tumultuous and uncertain, we can at least rejoice in the progress our country has made since the Stonewall Riots(although we still have far to go), and hopefully, we will look back fifty-some years from now and remember how much today’s Black Lives Matter protests have changed the world and the treatment of people of color.

In celebration of Pride, and thanks to my newfound quarantine kitchen hobbies, I’ve whipped up a fun, Fruity Pebbles Ice Cream to help you celebrate at home. If you don’t have an ice cream maker, I highly recommend this one by Cuisinart, that’s not too big, or too expensive, and ships pretty quickly from Amazon. Here’s the recipe:

Fruity Pebbles Ice Cream
Ingredients:
2 cups heavy cream
1 cup whole milk
Salt
3/4 cup sugar
3/4 cup Fruity Pebbles cereal

Directions:
1. Pre-heat oven to 350 degrees. Once heated, cover baking sheet in tinfoil and spread Fruity Pebbles cereal out evenly and place in oven for 10-15 minutes.

2. Remove from oven and place about 1/2 cup cereal into 1 cup of whole milk. Let sit for about 20 minutes and then strain the mixture, removing the cereal.

3. In a medium-sized mixing bowl, add whole milk, heavy cream, sugar (feel free to use 1/2 cup for less sweet ice cream), and a pinch of salt and whisk until well combined.

4. Cover bowl and place in refrigerator for 1-2 hours.

5. Set up ice cream maker and churn your concoction according to its directions. Sprinkle in remaining Fruity Pebbles right before you’re done churning.

6. Remove ice cream from machine and place in Tupperware or container in the freezer. Allow ice cream to freeze for 5 hours or overnight. Enjoy!
